Ideally, we would want to include the stripe fees and Tax amount into the sales receipt as a multiple lines without doing them manually.

What Stripe action are you using? It looks like it accepts line items. If your trigger creates line items, or you can create them with a Formatter step, you should be able to send in multiple line items for each of those fields.
