Can I send an email to a client from Outlook and have Zapier convert it to an SMS. If my client replies to the SMS, will Zapier convert it back to an email to my Outlook inbox?

I thought I could send an email directly to Zapier’s SMS Alert and it will convert it to an SMS. I guess that’s not the case. Which SMS app do you recommend?

Depends on your requirements, so best to outline a specific example for us.
SMS has character limitations to be aware of.
SMS now has phone number registration requirements to reduce spam which can take some time to get approved depending on the app you use.
