The issue with mapping date fields between apps in Zapier often occurs due to different date formats. To resolve it, add a "Formatter by Zapier" step after the Typeform trigger, select the "Date/Time" operation, and use the "Format" transform to convert the date into a format that Outlook Contacts accepts (for example, "YYYY-MM-DD"). Map the formatted date to the Birthday field in the Outlook Contacts action. This should ensure Outlook Contacts correctly recognize the date.

It is not a matter of formatting. The field does not exist in the “add contact to outlook” action, so there is no possibility of adding any information there.
is there any way of adding that field?

I had a look and I couldn’t see any such field either so I’d suggest contacting our Support team to submit a new feature request for that field to be added. You can do that here: https://zapier.com/app/get-help.
In the meantime, perhaps you could try using the Microsoft Outlook app’s API Request action in your Zap? It looks like their Update contact endpoint would allow you to add a date to the Birthday field for a contact:
