How do I extract the contact email from JIRA Issue Back to HubSpot Workflow after HubSpot Form Submission?

Hi there! Hoping someone might be able to help. I’m trying to automate the following:

Contact fills in a HubSpot Form, then
Form information is zapped into JIRA as an issue.
Person manually moves the issue to a “Complete” status
Contact email (within JIRA Issue from the original form submission) is placed in a HubSpot Workflow

I’ve managed to get the first part automated (HubSpot form into JIRA Issue) but I want to be able to have the contact email that is in the body of the JIRA issue (from filling in the HubSpot Form) be zapped back to HubSpot and into a workflow. I can’t seem to figure out how to extract the email from the Issue in JIRA to send back to HubSpot. Any ideas?
