How do I create a Zap/Workflow from ClickFunnels to Bubble?

Select an option from the dropdown list of options.

That may reveal more fields to map/set.

I did, “tags” is selected in the last screenshot.

Try picking an option from the Data Type tab to the left of the Custom tab.

Also, the mapped variable for Tags has “No data”

There aren’t any available options in the ‘Data Type’ tab.
