I’m using Shippo for shipping in WordPress/Woocommerce. Shippo adds the tracking number to the order notes and I need this to appear on the order details so the customer can see it on the fornt end in My account > Order > order details. I installed Woo Shipment Tracking plugin but it requires me to manually add the tracking number to a field. I need to automate extracting the tracking number and provider from the order notes and add it to the shipment tracking plugin fields - https://snipboard.io/c54U9v.jpg. Is this possible?

Have you tried using the WooCommerce Order Note trigger for this? The tracking number should be able to be returned by the trigger. Additionally, could you please try creating a new note with the tracking number on the order to see if the trigger pulls the tracking number data?
