Processing emails (only dates and subject line) from Gmail to a spreadsheet, I want the latest email to be added to the top of my spreadsheet, but Zapier put it at the bottom. How do I change that?

Default behavior is for the Zap to add new rows to the bottom of the data set.
You can use Views to sort data in GSheets: https://support.google.com/docs/answer/3540681?hl=en&co=GENIE.Platform%3DDesktop
Or you can use Airtable instead of GSheets: https://zapier.com/apps/airtable/integrations#triggers-and-actions
Airtable has Views that can be sorted: https://support.airtable.com/docs/sorting-records-in-airtable-views
