Emails sent via Email by Zapier app automatically include an unsub link.

If you want more control over the sent emails, then you would need to use a different email app.

I accidentally clicked the Stop these emails link in my sent email

To comply with CAN-SPAM laws, Zapier must immediately turn your Zap off when the Stop these emails link is clicked.
Once you turn your Zap back on, you'll be able to send emails again.

One last question. Is there a way to modify the link and the text to say “Unsubscribe”

Using Email by Zapier, you don’t have control over the included unsub link as that is added automatically.
