I’ve always used Google Sheets for gathering of data for ‘flexible onward use’ 

Are there definitive situations where Google Sheets or Zapier Tables is better / preferred (apart from if Google Sheet functionality is needed...)

Good question.

I would consider Airtable as very viable an alternatives.

Each app has different limits and pros/cons. (e.g. # of records, pricing, etc.)

GSheets is a spreadsheet.

Airtable and Zapier Tables are databases.
