We are planning to remove Zaybra and use Zapier instead to transfer data, transactions and information from Stripe to Hubspot.
Would it be possible? I mean, can Zapier cover all the data that Zaybra is bringing from Stripe to Hubspot?

That depends.
If the Stripe APIs/webhooks are being used being used by the other platform, then Zapier should have access to the same Stripe data.
