Can a Zap be created for when stripe sends a bulk payout (payout for numerous invoices) to our bank account? Eg a bulk receipt created in Xero to match the stripe payout?

I think what you are trying to do will need to use the Stripe web hooks (since it's not a new payment). So yes it's doable.
