We're using a Crm system called Job MGT. After we send a quote to a client which gets emailed via outlook I would like to have an automated follow up email go to the same email address 3 days later?

You can try use “new message in folder”, and configure it to ‘watch’ your sent folder.

Is any part of the existing process part of a zap already? If so, you can just add a 3-day delay at the end, then add another outlook step to send the follow-up.
If the current process is not in Zapier, then it gets a little more complicated. You’ll have to trigger the zap on the quote being sent from the CRM or the email being sent from outlook. Then still wait 3 days and send the follow-up.
How would you go about triggering it from Outlook.
Basically we send the quote from the crm which goes via outlook, then 3 days later I would like another email to be sent to the same email address as the initial email.
