Into the “Test” column I need to input “1. Quantity By Pricing Category 49207” which is not existing in the drop down list, how can I add there?

It seems that you are using Webhook trigger, can you share a screenshot showing your what you’ve received from the webhook/trigger. If your desired option isn’t received by the webhook, it won’t display here.
If you think it may appear sometime later, you should be able to copy one of the existing value and change the value name with your desired option, like this:
