The update time for the Professional plan should indeed be 2 mins. Although generally if there’s any issues on the apps end, at the time that the Zap attempts to check for new information, that could potentially cause a delay in them sending back the new information to trigger the Zap. Which can sometimes cause a delay in the Zap being triggered.
That said, I did some checking and found that there’s a bug reported for the New Spreadsheet Row and New or Updated Spreadsheet Rows (Google Sheets) triggers, where we’ll sometimes seeing a delay in triggering of around 30 mins. And as you experienced, this happens regardless of the Zapier plan’s update time settings. So I’ve gone ahead and added you to the list of affected users.
I don’t have any estimate on when it will be resolved by but we’ll send you an email notification as soon as it’s been fixed. And in the meantime, we’ll be sure to post any updates or workarounds we come across here!

Unfortunately I don’t have any updates on when a fix might be implemented for this. But I’ve added you to the list of folks being affected by this issue which will help to increase it’s priority and allow us to send you an email notification once it’s sorted.
Given the long-standing nature of this bug it may be worth looking at alternative triggers. Is the spreadsheet being populated by Google Forms submissions? If so, perhaps you could try using the Google Forms New Form Response or New or Updated Form Response triggers instead?
If it’s not connected to a Google Form, perhaps you could move the spreadsheet over to similar app like Zapier Tables for example? The triggers for Zapier Tables are instant so there shouldn’t be any delays in your Zaps triggering when a new records are added to the table.
If you do give an alternative app trigger a try and run into any trouble do let us know, happy to assist further if you get stuck at all.
I am also experiencing the same delay. This actually affects my business operations and would like to know when we can expect this bug to be fixed.
I'm experiencing this same issue too. Over 30 minutes delayed and 2 spreadsheet rows still missing. This is an integration between Stripe payments and Google Sheets
